De Mondion, the Michelin- starred fine dining restaurant at The Xara Palace Relais & Châteaux in Mdina, is seeking a passionate and knowledgeable Sommelier to join its award- winning team. The ideal candidate will play a key role in delivering a world- class dining experience by guiding guests through the restaurant's curated wine list and creating exceptional wine pairings that complement our contemporary Mediterranean tasting menus. Key ResponsibilitiesSupport delivery of high- quality wine and beverage service. Provide expert wine recommendations and pairings aligned with the restaurant's tasting menus. Deliver professional tableside wine service including presentation, decanting, and proper serving techniques. Educate guests on wine characteristics, regions, vintages, and producers. Collaborate with the culinary team to develop seasonal wine pairings. Ensure compliance with health, safety, and licensing regulations.

Requisitos

RequirementsPrevious experience as a Sommelier in a fine- dining or Michelin- starred environment. Strong knowledge of international wine regions, grape varieties, and food pairing principles. Basic wine knowledge, formal wine certification (e. g. , WSET Level 1or 2) is advantage. Excellent communication and guest- service skills. Ability to work in a fast- paced, high- standard hospitality environment. Strong organisational and inventory management skills. Valid Food Handler Licence in accordance with Maltese regulations (maintained at all times) . Fluency in English; additional languages are considered an asset.
